DELICIOUS BREAKFAST FOR DAD

As a child we always prepared breakfast for my dad on father’s day, and that is why I really wanted to give you some ideas of how to do an easy, fun and delicious breakfast for your fathers or husbands.

My friend Denise, who is also a mom of twins, has an amazing Instagram page @foodyweds where she uses everyday ingredients as well as leftovers and turns them into the most amazing and creative recipes. Every time I see one of her pictures I instantly get hungry, LOL. And that is why I asked her to help me bring this blog post idea to life.

Together we created these two plates, one sweet and one salty.

I’m sure that not only the dad will be very happy, but the whole family will eat it too.

Sion's pancakes:

1 cup all purpose flour

2 tbsp. sugar

2 1/2 tsp baking powder

1/2 tsp salt

1 1/4 cup milk (or almond milk)

3 tbsp. canola oil (or melted butter)

1 large egg

Mix all ingredients together in the blender for about 2 minutes. Let them stand for 3 minutes and allow the mix to rise a bit.

In a flat pan, heat a little bit of canola oil and butter, and with a large soupspoon or with the same blender, drop about 1/2 cup of mixture. Let it cook and flip with a flat plastic spatula.

Stack all cooked pancakes in a tower, you can add nutella or dulce de leche in between each, and decorate with berries and powder sugar. We made a nice heart shaped pancake with a cookie cutter, by brushing it with butter on every side.

Avocado toast:

Brush the bread with olive oil and garlic (you can add any flavor you want, like rosemary, parmesan etc.

Toast your bread in the oven or on a skillet.

While bread is toasting, cut the avocado in the shape of your preference, like a rainbow or simple mashed. You can also use ready-to-eat guacamole.

Remove the bread from toaster, and spread the avocado on top. Add all of your toppings and serve warm for more crunchiness!!
